"Food allergy is now a public health problem whose prevalence and persistence is increasing. These increasing numbers make it almost daily that we hear about food allergy. There is always the case of someone you know, a news story in a newspaper, a talk on a television show, or a social media publication. What will or will not be true? Are they perpetuating wrong ideas? What is a food allergy? Do you only develop food allergies in children? Does food allergy have a cure? Does not food allergy only cause "itching"? Is it true that it can be fatal? Is not there an excess of zeal on the part of the patients? After all, is a milk allergy the same as lactose intolerance? These are many of the questions I hear every day in clinical nutrition consultations, in research work with different sectors of the community, and in conversations with friends, acquaintances, or even families who suddenly come up against a limitation they perceive to be, bigger than they could think. Never, in my work or in a more informal conversation, I have considered these questions as irrelevant or less intelligent. I always think that every answer I give results in a more informed citizen and that this can make a difference in the well-being of the allergic sufferer. These questions were even the starting point for this book. Book that was thought to be practical and simple but enlightening. A book which I hope will clarify many of your doubts, allowing you to clarify those of others. '
